Cowboy Caviar


Cowboy Caviar is my go-to recipe when I want something delicious and fresh. We enjoyed this on New Year's Eve this year. Serve it with tortilla chips and celery sticks for dipping.

Cowboy Caviar

1 can black beans
1 can white hominy or chickpeas
1 can yellow hominy or navy beans
1 red pepper, finely chopped
1 yellow pepper, finely chopped
1 bunch green onions, finely chopped
1 roma tomatoes, seeded and chopped
1 bunch cilantro, chopped

Dressing: 1/2 cup olive oil, juice of 2 limes, salt and pepper and 1 or more cloves garlic, crushed

  1. Thanks, Glenda! I think this qualifies as a veg with beans a protein when I need to eat. Plus, the chips are my carb so looks like supper is covered...way cool.

    I think my recipe has Rotel, black beans and mexicorn..
    and we use tortilla chips! It is wonderful! It has
    been so long since I've made it.

  9. This is such a nice recipe to have at this time of year. It is a great way for the superstitious to start the new year and wonderful "game" food for the rest of us. Black-eyes peas are unique in the bean world and seem to appeal to more people as well. I hope you have a great day. Blessings...Mary

  11. i adore any kind of salsa...this one looks fabulous! in the summer when our garden is filled with cilantro, peppers and tomatoes this will be a great recipe to have on hand!
