Cranberry Steam Pudding and a few words from Robert Louis Stevenson

A friend just sent me this picture of our family in Dalat, Viet Nam ... probably 1966. How awesome is this. Those cool gold glasses, yup, that is me.

I have been in the kitchen making Cranberry Steam Pudding (bring me some figgy pudding style), and thought you might enjoy the recipe. 

Kae's Delicious Cranberry Steam Pudding

Cut in half: 2 cups raw cranberries

Blend: 1/2 cup molasses and 1/2 cup boiling water 

Blend: 1 1/2 cups flour with 2 teaspoons soda. Add to molasses mixture. Add cranberries. Pour into a 4 cup casserole.

In a large pan pour 2 cups water and some type of rack to keep the dish on. (I use waded up foil.) Set dish on rack. Cover and steam for one hour, keeping  the casserole on the rack, above the water. Add more water if needed.

Unmold and serve with sauce:
1/2 cup butter
1/2 cup whipping cream (not whipped)
1 cup sugar
Simmer for 3 minutes then add 1 teaspoon vanilla.

Loving Father, help us remember the birth of Jesus, that we may share in the song of the angels, the gladness of the shepherds, and the worship of the wise men.

Close the door of hate and open the door of love all over the world. Let kindness come with every gift and good desires with every greeting.

Deliver us from evil by the blessing which Christ brings, and teach us to be merry with clear hearts.

May the Christmas morning make us happy to be Thy children, and the Christmas evening bring us to our beds with grateful thoughts, forgiving and forgiven, for Jesus sake. Amen.

  1. oh, it's an early Christmas with a 'gift' from you. I was JUST this morning thumbing through my S volume of our encyclopedia (really) and stopped to read the story of Robt Louis Stevenson--thinking, "I'll bet he knew Jesus." And I'm guessing he did. This is beautiful. Merry Christmas, Glenda.

  10. I'm late wishing you a Merry Christmas but the greetings are the same. We have been so involved with my dear, little mother since she fell and broke her pelvic bone. We were able to bring her from the rehab center to our home for a few hours on Christmas Day. What a treasure. I love this Christmas prayer - and the photo of your Viet Nam days. Were at the Dalat School? I have many friends who were students there - and some who were teachers. Thanks for sharing your family photo.
