Pecan Goodness

Whenever I hear the sound of Dave, my husband, rustling around in the kitchen, I know in a few short minutes, or hours, I will be eating something delicious.

Dave just got home from a week of meetings and he often unwinds ... in the kitchen. Lucky me.

This dessert muffin is delicious. Our downstairs neighbors love it when Dave bakes these ... because he shares.

Here is Dave's recipe:

PECAN PIE MUFFINS

1 cup brown sugar
1/2 cup flour
2 cups chopped pecans
2/3 cups butter, softened
2 eggs, beaten

Mix sugar, flour and pecans. Mix eggs and butter and add to dry ingredients.

Spoon batter into muffin cups. Bake at 350 degrees for 15 - 17 minutes.

Enjoy. Share with your neighbors, or you will want to eat them all.

  11. Looks good! I am safe from them for a little while...all the pecans disappeared when a certain visitor was making granola and it is too hot to turn on the oven! But I am clipping it for another day.


    I too have been getting notes about how I wasn't showing up in blog feeds...and I suppose that the few folks I like to check up on haven't shown up in mine either...You do know you are one them, yes?

  12. Our Emily has taken over our cooking/baking for the summer in preparation for her marriage. I'm going to sent this to her email as a great big hint! So nice that Dave enjoys unwinding by baking. I wish I lived downstairs, too.
